Restaurant Ravni Žakan - Kornati

 

In the tavern “Zakan” we respect and treasure the traditional preparation of food of the Kornate’s fishermen and workers, made of fresh, smoked and marinated fish and fresh sheep meat and visitors who wish to encounter Kornate with its true qualities thus eat well, will undoubtedly try the cuisine of the Kornatian fi shermen and peasants which came about on the following rules.

  • fresh fish is the only good fish
  • what you would not eat, don’t off er a guest (if it isn’t good for you, it won’t be good for a guest).
  • in Kornate, it is best to eat what is caught there and season it with what is picked there.
  • always offer a choice of fish with the advice of a host to a guest.

Preparing Kornatian fish and crabs:

  • boiled (steamed): John Dory, sea bass, gilted sea bream etc.
  • barbeque: stripe red mullet, tooth fish, all blue fishes.
  • brudet (fish stew): grooper/red fish, European conger , frog fish, crab etc.
  • buzara style: prawns, different shrimps
  • raw: yellowtail, sea bass, tooth fish
  • salted: salty sardines
  • baked (under a bell): all fish larger than 1kg.

Should you fi nd the above rules acceptable, you do not need a menu in our tavern but a good choice of fi sh (meat), type of preparation and advice of a host and you are guaranteed to eat well.

MEAT DISHES (Kornatian lamb “sile”- old lamb). Kornatian lamb differs from other lamb meat by its color, taste, size and smell, which is caused by the lamb’s small consumption of sweet water on the pastures.

Preparation:

  • barbeque - only in May and June
  • baked under a bell with potatoes
  • gulash with potatoes and pees
  • boiled (steamed) with Dalmatian prosciutto ham and vegetables

The preparation of fish and meat in Kornatian style is demanding due to its specific aspects (fresh fish, fresh lamb, barbeque on wood, requirement of preparation, ambient and experience), thus it is very hard to achieve envious quality in a cozy arrangement.

Because of this reason, should you navigate through the aquatorium of the National Park Kornate in the pre-season or post-season, in our tanern “Žakan” on the island Žakan, we can off er you to choose your own fish (meat), type of preparation and a needed assistance of the restaurant staff to eat quality food from our recepies.
