Preparing Kornatian fish and crabs:
Should you fi nd the above rules acceptable, you do not need a menu in our tavern but a good choice of fi sh (meat), type of preparation and advice of a host and you are guaranteed to eat well.
MEAT DISHES (Kornatian lamb “sile”- old lamb). Kornatian lamb differs from other lamb meat by its color, taste, size and smell, which is caused by the lamb’s small consumption of sweet water on the pastures.
Preparation:
The preparation of fish and meat in Kornatian style is demanding due to its specific aspects (fresh fish, fresh lamb, barbeque on wood, requirement of preparation, ambient and experience), thus it is very hard to achieve envious quality in a cozy arrangement.
